About the Recipe

Break out your waffle maker! It’s Sunday morning, the holidays are right around the corner, and, if I had to guess, I’d say you have all the ingredients to this easy waffle recipe in your pantry already. Come on, let’s kick back and enjoy a lazy weekend breakfast!

Ingredients

Equipment

  • Waffle Maker

Ingredients

  • cups almond milk, at room temperature

  • 2/3 cup melted coconut oil

  • 1/3 cup tablespoons maple syrup

  • 4 teaspoons vanilla extract

  • 2 large eggs

  • 3 cups all-purpose flour, spooned and leveled

  • 1 cup whole wheat flour, spooned and leveled

  • 4 teaspoons baking powder

  • 1 teaspoon cinnamon

  • ½ teaspoon sea salt

Serving options:

  • Maple syrup

  • Fresh fruit

  • Nutella

  • Chopped hazelnuts

Preparation

  1. Preheat a waffle iron and prepare your desired toppings.

  2. In a medium bowl, whisk together the almond milk, coconut oil, maple syrup, vanilla, and the egg.

  3. In a large bowl, mix together the all-purpose and whole wheat flours, baking powder, cinnamon, and salt. Pour the wet mixture into the dry and mix until just combined.

  4. Scoop ½ cup of batter for each waffle into a Belgian waffle maker, or scoop an appropriate amount for your waffle maker. Cook for 4 minutes, or until golden brown and lightly crisp. The timing will depend on your waffle iron.

  5. Serve with desired toppings.
