Vegetable and Ham Fritters

About the Recipe

Simple, tasty and best of all the kids LOVE it! Great recipe for quick dinners or school lunches. You could easily alter this recipe to add other veggies or meat.

Ingredients

  • 1 small carrot, grated

  • 1 small zucchini, grated

  • 1/4 cup frozen or canned corn kernels

  • 1 tbsp chopped fresh parsley leaves

  • 1/3 cup grated cheddar cheese

  • 1/2 cup ham, diced

  • 2 eggs, lightly beaten

  • 1/2 cup flour

  • 3 tsp olive or avocado oil

  • Salt and pepper to season

Instructions


  1. Combine carrot, zucchini, corn, parsley, cheese, ham, eggs and flour in a bowl.

  2. Heat 1 teaspoon oil in a frying pan over medium heat.

  3. Add 1/4 cup mixture. Using a spatula, flatten slightly.

  4. Repeat to make 2 more fritters.

  5. Cook for 2 minutes each side or until golden and cooked through.

  6. Transfer to a plate lined with paper towel. Repeat with remaining oil and mixture to make 8 fritters.

  7. Season with salt and pepper.

  8. Cool. Refrigerate in airtight containers. Serve.
