About the Recipe

This is one of those amazing ideas that the entire family can enjoy for lunch, especially older kids who need lots of nutrition. You can make use tuna or even chicken salad using rotisserie chicken or chicken leftovers, and turn it into different salad lunches, like a wrap or even a sandwich. It sounds like convenience to me!

Ingredients

For the tuna salad:

  • 1 can tuna in water

  • ½ cup finely chopped celery

  • 1 lemon, juiced

  • ⅓ cup mayonnaise

  • ¼ teaspoon salt

  • ½ teaspoon pepper

  • 1 teaspoon Creole Seasoning, optional

For 1 packed lunch:

  • ½ cup tuna salad

  • 6-8 whole grain crackers

  • 1 apple, sliced

Instructions

  1. In a bowl, whisk the lemon juice, mayonnaise, salt, pepper, creole seasoning. Add the chopped celery and the tuna into the bowl, and mix to combine all the ingredients. Transfer the tuna salad inside a large container and refrigerate for up to 4 days.

For a packed lunch:

  • Scoop ½ cup of tuna salad in the main compartment of a lunch box. Pack the apple slices in a separate compartment or the same one as the tuna salad -these two can go in the same one if necessary. In another compartment or small container, pack the crackers.

  • Refrigerate the lunch box until it’s time to pack it for school. Add an ice pack inside the lunch bag.
