About the Recipe

Ham salad wraps are a delicious make-ahead cold sandwich recipe perfect for packing into lunch boxes, whether they will be taken to work or to school. The combination of cream cheese, mustard, corn, and deviled ham spread is wrapped in corn tortillas.

You could use canned salmon, chicken, or tuna in place of the deviled ham. We added shredded carrots and you could spice it up and add some minced green chiles or jalapeno peppers.

Be sure that you pack this sandwich in an insulated lunch box along with a frozen juice box or frozen gel packs to keep it at a safe temperature until lunch is eaten.

Ingredients

  • 1 (8-ounce) package cream cheese (softened)

  • 3 tablespoons whipped mayonnaise

  • 3 tablespoons honey mustard

  • 1 (16-ounce) package frozen corn (thawed)

  • 10 ounces of fresh ham diced, or 2 (4.5-ounce) cans deviled ham

  • 10 (8-inch) corn tortillas

Instructions

  1. In a medium bowl, beat the cream cheese with the mayo until smooth. Beat in the honey mustard.

  2. Stir in the corn and the ham.

  3. Soften the corn tortillas by wrapping them in a microwave-safe paper towel. Microwave the tortillas on high power for 10 seconds per tortilla until they are soft. Unwrap the paper towel and spread each of the softened tortillas with the ham mixture. Roll up the tortillas, enclosing the filling, and cut them each in half.

  4. Serve the wraps immediately, or wrap and freeze. To thaw, let thaw in refrigerator overnight, or place the frozen sandwiches in insulated lunch boxes with a frozen gel pack.

  5. If you aren't going to freeze the sandwiches, you can include other vegetables in this filling, like chopped green or red bell pepper, shredded carrots, baby peas, sliced summer squash, or chopped tomatoes.
