About the Recipe

This recipe for Mongolian Beef is just what the title says: easy, healthy and made in one pan. This recipe uses tender shaved beef, so it cooks in no time at all, and is packed with flavor. Perfect for a quick weeknight dinner for the entire family, and made with pantry staples like brown sugar and soy sauce, this is an easy meal to keep in your rotation. Serve this delicious and quick meal over rice or cauliflower rice, with a side of steamed broccoli.

Ingredients

  • 21 oz shaved beef steak

  • 3 tbsp corn starch

  • non-stick cooking spray

  • 1 ½ tsp sesame oil

  • 6 scallions

  • 6 cloves garlic

  • 1 ½ tsp ginger (either fresh ginger root, or the squeeze tube)

  • ⅜ cup brown sugar

  • ⅜ cup water

  • 4 ½ tbsp low sodium soy sauce

  • 3 tsp sriracha

Instructions

  1. Preheat a frying pan or wok over medium high heat.

  2. Toss the shaved beef in the corn starch.

  3. Spray the pan with non-stick cooking spray, and add the beef.

  4. Cook for 5-6 minutes, tossing frequently to separate the pieces of beef.

  5. Cook until the beef has crispy edges, and is no longer pink.

  6. Remove the beef from the pan and set aside.

  7. Chop the scallions and separate the white parts from the green.

  8. Mince the garlic.

  9. Add the sesame oil to the pan.

  10. Add the white part of the scallion, the garlic, and the ginger to the pan with the sesame oil.

  11. Saute for 1-2 minutes until fragrant.

  12. In a small bowl, combine the brown sugar, water, soy sauce, and sriracha.

  13. Add the sauce to the pan, stir to combine.

  14. Add the cooked beef back to the pan with the sauce.

  15. Let the beef simmer for a few minutes to absorb the sauce.

  16. Garnish with the chopped green ends of the scallions.

  17. Serve immediately.
