Hawaiian Pork Tacos

About the Recipe

With this easy 30-minute recipe, you’ll get yourself delicious pork tacos faster than you can get served at the local taqueria. They’re one of my go-to’s when I need taco night for my family quick!

Ingredients

  • 2 tablespoon olive oil

  • 2-pound center-cut pork loin, cut into bite-size pieces

  • 2 tablespoon Taco seasoning

  • 1 cup diced fresh pineapple

  • 16 corn or flour tortillas, warmed

  • Pineapple Salsa

  • 1 cup crumbled Cotija cheese

Instructions

Cook the pork:

  1. In a large cast-iron skillet, heat the oil over medium-high heat. Add the pork pieces and the seasoning and cook for 7 to 9 minutes, until the pork is cooked through and no longer pink.

  2. Add half of the pineapple to the skillet. Continue cooking for about 2 minutes, until the pineapple has released its juices and become incorporated with the pork into a sauce. Remove the pan from the heat.


Assemble the tacos:

  1. To assemble the tacos, place a layer of cooked pork on each tortilla and top with some pineapple salsa and crumbled cheese.
